But vegan maestro Shannon Martinez (Smith & DaughtersSmith & Deli) and Euro-focused Ian Curley (The EuropeanKirk’s Wine Bar) are set to prove that unlikely pairings really can work a treat, when they launch their new collaborative venture next month. The powerhouse duo is embracing the world of plant-based fare, together heading up the culinary offering at new vegan and vegetarian bar and eatery, Lona Misa.

There's something happening here! We need a Sous Chef-Pastry to join our pre-opening team and expand our impressive multi-outlet venues.

 

You'll be responsible for the pastry execution of amazing sweet treats throughout South Yarra.

 

Reporting to the Executive Chef, this is a challenging and busy role suited for an experienced Pastry chef. A role to make your own with the support of a CDP, you will absolutely need previous hands-on experience in all menu design and recipes.

 

You must have a wealth of experience but bring your mark on everything sweet, there are no limitations to what you can create or plate up. We provide flexible rostering; good work-life balance and your role is a critical part of the kitchen family with bags of development opportunities.

 

  • You are a hands-on Sous Chef-Pastry with a minimum of 2 years’ experience in a similar cutting edge hospitality environment
  • Assist in menu planning, implementation and execution
  • Controlling food preparation and managing wastage for your section
  • Lead by example as a hands-on-chef with excellent quality assurance and standards
  • Assist in the development through innovative and original menu planning and maintenance of high food standards
  • Establish and maintain effective employee working relationships at all times
  • You will enjoy being on tools and bringing our creations to life
  • Bring your on-trend ideas, new dishes, new concepts and new menus to make our food offering the best in the area
  • Good knowledge of WHS, food hygiene and efficient kitchen processes
  • Your team think you're absolutely fabulous and you LOVE to train your peeps
  • Operating and managing the pastry section of the kitchen and liaising with the Executive and Sous Chefs to ensure a successful working environment.
  • Preparing ingredients and handling baking and other kitchen equipment.
  • Creating pastries, baked goods, and confections, by following a set recipe.
  • Developing new recipes for seasonal menus.
  • Decorating pastries and desserts to ensure beautiful and tasteful presentation.
  • Meeting with customers to discuss details and planning of custom-made desserts and pastries for special occasions, such as weddings.
  • Monitoring the stock of baking ingredients
  • You work fantastically under pressure, are cucumber cool and a natural-born leader who gets things done
